Hi All,

Currently have the HBC Premium Pilsner in my fermentation fridge but being my first Pils I'm not sure on the fermentation schedule.

It's fermenting nicely @11.5 degrees and has been for two weeks. My questions:

I've heard about raising the temp to 18-20 degrees and then after a few days cooling right back down to 2/3 degrees very slowly.

At which point should I be bottling?

Anything else I should be doing different to a ale?

No raise in temp (that's what Trump/Clinton voters do)
Secondary same temp as primary fermentation (12C) for 2 weeks
Lagering a.k.a. conditioning:
  1. Standard: 4 weeks 3C
  2. Super conditioning: 1 week 5C, 1 week 2C, 2 weeks 0C

Never heard of the the 2. conditioning method with stepped cooling before I started reading home brewing forums, i.e. no commercial brewer has 3 different cooling rooms.

Just read your question again. got it wrong. Thought you want to raise the temp for the second fermentation to 20C....

Yes, between 1st and 2nd fermentation you raise the temp to 18-20C, thi is called Diacetyl rest.
