Posted about my smelly brew the other week. In the first 3 days it when from 1.065 to 1.025. Two days later it was still at 1.025 so I added nutrient and gave it a stir to degas and get rid of the sulphur smell and try and get the yeast going again. Another 2 days later it is still at 1.025. I have given it another stir and moved it into a water bath to try and get the temp up to 20-21.

I am starting to worry about oxidation and infection due to having to check SG (needs bottled at 1.020). So should I keep trying to get it to ferment down to 1.020 or just bottle it with the higher SG?

P.s. I will be checking the SG tonight so will post results but any suggestions in the mean time are greatfully received

N.B I have checked my hydrometer and it is in working order.

OK so I checked the SG last night and it appears to be coming in at 1.024. I am encouraged by this so am going to leave it for a few days before testing again. If it is low i will add sugar at bottling to get a SG of 1.020. I don imagine it will have much of an effect on the taste.

Did this brew in November (Too late for Christmas as it turned out) and it did exactly the same thing. OG 1065 and after 6 days 1025 and that's where it stayed of another 8 days when I decided to bottle it.
The instructions said not to prime the bottles but I did with 1 Coopers carbonation drop per 500ml. I used PET bottles so I wasn't too worried about exploding bottles.
I have been drinking it for just about a 2 weeks now and it's fantastic! I was just going to try one and leave until next Christmas, but that was never going to happen the minute I tasted the first one....

:drink:

Bottling mine tomorrow. I will test the FG then but I have not looked at it for about a week. I am getting the feeling it is like a watched kettle!

I am not going to prime unless it has gone past 1.020.

+1 to johnnyboy1965. i wouldn't prime this beer at bottling, it does not need it. I brewed in March last year and drank them at xmas and they were not only lovely and rich beers but had huge heads on them, you might need to take care when pouring them out...

Well I bottled this this morning. FG was 1.024 so no change in the extra time I gave it. Fingers crossed that is carbonates

I finished the last of my brew over the weekend. It was a fantastic beer. Got another 2 cans on order. I am going to try my best not to touch the brew until next Christmas.
Yours will turn out great I'm sure.
I put 1 carbonation drop in mine but by the sounds of it from the other post from more experienced brewers, I needn't have bothered. Great head on it mind all the way down.
Good luck.
