i am planning a brew on a greek island and looking for some advice.

I am only there for a week, so what i was planning was a TTL clone brewed on the 9th April this must then be put into a plasic barrel or cornie on 14th April, as i leave on the 15th and i will not be there again until 1st July.

The question is, is it worth risking the fermentation not completing in 6 days and will the brew be ok left in a barrel for 10 weeks?
 
Have you heard of sods law ? :lol:

But seriously, if all goes well fermentation will be finished and my only real concerns would be that you were racking a fairly yeasty brew into the keg, this in itself shouldn't be too much of a problem if you can store it fairly cool for the 10 weeks.
How warm is your storage area going to be in the Greek islands?
 
I would be concerned about Yeast Autolysis causing off flavours with a large amount of yeast present at relatively warm storage temps :hmm:
If you can get fermentation over in four or five days and using some finings to drop as much yeast out as possible then I think you'll be ok :thumb:
