pineapple wine recipe needed

picked up 4 pineapples today, just wandering if anyone had a decent recipe to make up a 5 gallon batch. i had thought of chopping them up boiling them up skins included and then fermenting the lot for a few days before removing the pineapple and transferring to demijohns

i think i read on here there is problems brewing with pineapple but i dont know never tried, someone will know .
 
Ingredients
4 Fresh Pineapples
1/2 pint White Grape Concentrate or 250g Chopped Raisins/Sultanas
1Kg Sugar
4L of water
2tsp Citric Acid
1/2tsp Tannin

Method
1) Wash, top and tail the pineapples but do not peel them
2) Chop them up into small cubes and boil them in 2L of water for 15 minutes
3) Strain onto the sugar, acid & tannin, stir well <- Add raisins/sultanas her if using
4) When cool add the grape juice concentrate (if using), nutrient & yeasts
5) Pour into fermentation jar, top up, fit an air-lock & proceed as normal.
