Simple CJJB recipe - 1/2gall nettle heads simmered 45 mins with lemon zest and ginger; strained onto 2lb12oz sugar, lemon juice, nutrient, campden tablet.
Will pitch the yeast in the morning.

i usualy knock out gallons rather than halfs, my favorites are leaf wines, oak, beach. whalnut, lavender leaves can be added to improve the smells and dont forget bramble tips too
Must have a go at nettle wine, never tried making it, but my uncle made it a few times many many years ago (t'was he who got me into homebrew many years ago :drunk: ).
I have a few empty dj's at mo, and know a spot local with loads of nettles , will post on how it goes.
Bottled it. Used sorbate+campden as I suspect it wasn't totally done, but I'm tidying round before going to Spain.
A pleasant white. Not sure what I can compare the flavour to, but it's nice, decent body etc.
Wondering how it'll age.
