I've had a pear turbo cider going for a good few days now and its developed a head a good few cms thick of sludge. There's actual pear juice in the as well as 1l of juice made with 50% pulp. So am I better racking the juice into a new demijohn and leaving this behind, leave it as in or just stirring it back in and continuing as normal?
 
I'd probably leave it to about 7 days with a bit of a shake now and then from day 5 to see if that stuff will sink, then rack and top up.
 
Thanks for the reply, this is day 4mso ill give it a shake tomorrow and how we go.

At least the reply wasn't rack it off or spoil the cider.
