Well today I have just used my vinbrite for the first time.
I made a gallon of pawpaw wine from scratch using 6 pounds of fruit, one kg of sugar. and champagne yeast plus all the other usual ingredients.
I maust say that when it was in the FV, I thought I may have to chuck it as the smell was bliddy vile.
anyhoo I persevered with it and into a DJ it went. worked away quite slowly for about 2 weeks then settled down.
God awful colour and an incredible amount of sediment.
Racked into a clean DJ with a CT and left it alone for a couple of weeks and racked again.
Checked the SG and it was down to about 990 and tasted not unlike a sumo wrestlers jock strap soaked in donkeys pi55 LOL
Anyhow, I thought I will just continue on with it as a learning experiment.
Twas beginning to clear a wee bit so I reckoned I should give a smack on the head with a clean DJ, a CT and a dose of Pot sorb.
As I had a fair amount of head space after that racking I thought it needed back sweetening and it didn't have a lot of flavour so I got ta thinkin (something I'm not usually known for) and came to the conclusion that grape juice would be the go as it is recommended by so many of the experienced folk on here.
Off down to the local super market and back home with a bottle of sparkling white grape juice. Top up DJ using about 500 mills and stir like a lunatic to degas.
Anyhoo read the instructions (once again not my strong point) and set up the vinbrite.
got it all working fine and went6 off for a ciggy.
Final result = Smells Great, Looks brilliant and even tastes pretty good.
Am I chuffed ? You bet I am and I will bottle if up and put it away to age this arvo.

This is impressive, sparkling white grape juice saves the day.

Hopefully will improve further with age how long are you think you'll have to age it for?

P.s How much did six pounds of Paw Paw set you back?

Hi Hulpy.
I'm thinking I will age the Pawpaw 6 to 8 months although it is quite drinkable now.
The 6lb of pawpaw cost me nothing as I grow them in my back yard along with mango and lychee.
Waiting for theses two to fruit in about six weeks'
