Orange Clove Mead - Clover honey?

Sg is currently 0.990, so I can't see it getting much lower. I'm going to rack it off this afternoon, then spend a while working out how to get all the orange slices out of the demijohn. :wha:
 
Potentially stupid questions alert!

I've just racked this off to a clean demijohn, but I stupidly forgot to sterilise it! My trust in the beer gods tell me that the vikings did this for thousands of years without Videne, so I'm sure it'll be fine, but is it worth racking again into another sterilised demijohn?

Also, should I have put a crushed campden tablet and wine stabiliser in too like I would with a WOW?

I intend to back sweeten this with more honey before bottling, is it best to do this earlier or closer to bottling time?
 
I would suggest that you would be better leaving it to mature before back sweetening it. At this stage it will have a hot alcohol taste which will mellow with time so if you back sweeten it now you could over sweeten it.
 
If you are worried it has not stopped fermenting then leave it but I do not see it getting much lower. I would probably just add them now and give the DJ a wee shake to mix it up and degas :thumb:
 
I was a mead maker before I got into beer. I haven't done a batch for a while but I found 'GotMead' (google it, I'm not allowed to link it here for some reason) invaluable for its knowledge.
The forum there is a good place for additional info for future meads.
