My black IPA has now been in the FV 19 days - full details here:

It's continued to bubble now and then (yeah, i know, usually us newbies complain because the airlock isn't bubbling :-D ) but it's sporadic.

OG was 1.052, yeast is Wyeast 1056 American Ale.

I just took a small sample with a sanitised syringe and plastic tube - gravity now is 1.010-1.012, hard to see exactly as it's so dark! But this is about what I'd expect.

Of course i also had a cheeky taste, tastes smashing :-)

Question is, is it safe to bottle after 3 weeks as I had planned? (In practice will probably be Sunday so 22 days). I'm a little concerned about making bottle bombs since the airlock is still bubbling. On the other hand since the gravity has fallen as planned i assume I'm good to go.

Opinions from the wise and great? (Or indeed any old chancers of this parish :-D )

Usual advice is to check SG on two or three consecutive days and if it's steady its finished. I usually then allow it to get clear or nearly clear with the last two days in a cold place. My guess is that yours is ready to package, with or without the cold place.

Ok, thanks @terrym

This was pretty much the plan based on what I've read elsewhere on the forum. And also why i took a reading today rather then waiting until the weekend.

Just want to be sure I've not missed anything else.

Cheers acheers.athumb..:beer1:

According to ABV calculator on Brewersfriend.com you have 76-80% attenuation, and the Wyeast website states 73-77% attenuation for the 1056 strain. Looks like the yeast has done everything it can and as terrym says it is ready to bottle. Lets hope it conditions in time to be enjoyed over the festive period :beer1:

Thanks, checked gravity again this morning, holding steady at 1.010. Will double check again tomorrow before I transfer to bottling bucket but looks like I'm good to bottle tomorrow evening.
