Hi (again!)

Well, I have done my first 'Malt Extract' brew on Sunday, but I am having problems!

I made the yeast starter on Thursday and it looked fine. Nice head. Very similar to the one posted on my other thread viewtopic.php?f=31&t=4303 .

However, it is now 4 days after the yeast was put into the wort, temperature at 25oC. I gave the wort a really good mix with my long spoon to introduce more O2 into the wort, so a good head was showing (about 3")

Now the head has gone and it looks like I can see what looks like dried yeast on the surface, except it is brown.

What have I done wrong. The wort is in a fermentention bucket, lid on to stop infection. It came straight from the boiler to the bucket. Do I need to transfer it again to introduce more O2?

Please help. Photo's can be provided when I get home tonight.

Thanks
M

Sounds like its finished to me.

25C is fairly warm so fermentation would proceed at a pace . . . I've had a 1.038 beer ferment out in 36 hours from pitching at 20C when I pitched a lot of yeast.

Do nothing without taking a gravity reading

Cool!!

I will have to read the next pages of my book. Think I need to transfer it to my barrel now. Any advice before tonight will be greatly appreciated.

Thanks anyway.
M

Take your gravity readings first. Then if it's low enough leave it another 24hrs if the reading is the same again then you can transfer it into your barrell.

Well, after a firs taste while getting it to the barrel, it seams to be really good. Going to give it a couple more weeks then dive in.

I'll keep you all updated.

M.
