Hi I had a cellar 7 kit (summer berries) and followed it to the letter and even left it to ferment a little longer as I wasn’t convinced it had finished. I’ve put all the finings in and left it to clear for a good few weeks. I’ve then come to bottle it but when I’ve worked out the % it’s only 1.010 🤔🤔 what have I done wrong and can I do anything to change it. I know it seems a silly question but I’m new to this home brew haha

I used the yeast in the pack provided and made sure it was in date, I used the hydrometer at the guide that can with it

Think you've just got your decimal point wrong, so it's really 10.1%. Sounds about right if you made it up to the full volume. I always brew short - to about 20L instead of 23L to bump the ABV up a bit.

Work it out by taking the FG away from the OG (ignoring the decimal points) and multiply by 0.131.
Example OG 1080 minus FG 1000 = 80. 80 x .131 = 10.4%

I wasn’t convinced it had finished.

You say you were convinced it had finished how did you come to this conclusion as you dont say?

What was the starting hydrometer reading.

What was the finished hydrometer reading.

This was my first reading in the photo
And my second is the diagram is where the yellow line is now

IMO the starting gravity SG is 1.082
The finishing gravity FG is 1.010
so the ABV will be approx 9.5% ABV
the budget kits would be around where your SG is but the FG should finish lower nearer 0.995 approx
Your wine at 1.010 FG will be rather sweet as all the sugars have not been fermented so you do need it to go lower to ferment the sugars out and give a stronger ABV
Are you sure it had finished fermenting? or what made you think it had
