I brewed the NEIPA from the Greg Hughes book and in the middle of bottling.
The book says two weeks at 10 degrees after that. Question is, will it carb up at that temperature? I'm a bit sceptical.
Yes it will carb up, there will still be yeast available I've done it plenty of times when I used to bottle. There is a lot said about oxidation of NEIPA style, have you sorted that out with the bottling ?
