I didn't cut them back to ground level last year.

Do you think it'll upset the new growth if I do it now?

I want to let the new stuff have all the nutrients possible.

I'd cut down the top growth by half, then wait a week or so then cut down to ground level, this want be sucha shock to the plant, but having said that Hops are a hardy plant and will take some abuse!
