The jury's out on this one for me. He's obviously a very experienced brewer but the flavour of mushrooms in has me wondering and his method for using them has me shaking in my boots. These are very strong beers though and I'm have to wonder what would happen to the mushroom flavour over the time it would take to condition them properly.

Adding Fungi to wort, that'll never catch on.......

I wonder if there are similar compounds in mushrooms as obtained from earthy and savoury hops like Fuggles or Sorachi Ace?

Denny's pretty well known here in the States. Several of his recipes have been brewed by pro brewers in the States and in Norway.

We recently did a will it brew challenge at my local homebrew club kind of like a secret Santa thing, I took along some dried porcini mushrooms because I thought it might actually work. I can confirm it does, the guy that got them was the one professional brewer of the group. Steve from beer nouveau so not surprising can't remember the exact style but he added a 1 gallon white wine kit. The beer had some lovely subtle earthy umami type flavours. http://manchesterhomebrew.co.uk/sept-2017-meet-writeup/
