I am hoping to bottle this brew tonight providing the gravity is good but unsure of what kind of carbonation to go for. Has anybody done this kit and if so what kind of carbonation did you go for? I was planning on using up the carb drops I have left and putting 2 per 500ml bottle.
 
Weiss beers are supposed to be highly carbonated but with bottles there's always risk about the bottles being able to take the pressure and pouring the stuff without producing a glass of foam. I just bottled a few of a Festival Peach Weiss I made (rest went into keg) and added on level teaspoon of brewing sugar to each. As carb drops equate to less than a teaspoon I think I'd also go with 2 per bottle.

Only had a little taste when checking the gravity and before dry hops were added. I made the standard Festival Weiss beer last year and was blown away by how good it was. This seems pretty much the same as that one but with a peach note, fairly subtle which is what you want I guess. The standard one didn't have any hops either which I expected as it should all really be about the yeast characteristics so it will be interesting to see what they add to it this time. I think it was being sold as a limited edition so you may struggle to find one now.
 
I used 3 carbonation drops (9g) per litre bottle, and mine came out perfectly carbonated.

Sadly that'll be 1.5 drops per 500ml, which isn't much help for you, so maybe 1 teaspoonful of sugar or dextrose would be easier to measure out.

The sourness of this kit becomes less prominent after a few months in the bottle, so save it for a hot summers day and it will be one of the most refreshing alcoholic drinks you've ever tasted.
