I'm experienced at brewing but new to AG.

How much liquor do you mash with? Is it important? If so, why do only some recipes list that volume?

I aim for 2.5L/kg too, but go down to a stiffer 2L/kg with higher gravity brews in order to still fit it in the Mash Tun. I perhaps see a slight reduction in efficiency when thats necessary, but it works okay unless I go much below that.

Some people (particularly BIAB brewers) may use the no-sparge method and so mash in all the liquor; the few times i've tried that myself it has worked, though with lower efficiency - but I'm far from expert with no-sparging so that could just be me.

I aim for 3l/Kg . . .sometimes up to 4L/kg . . . although for larger batches I have to drop down to 2.5l/kg . . . . I wouldn't go much below that.

For BIAB . . . aim towards the higher end so 3-3.5L/kg ;)

I don't worry too much about ratios. I got for the same volume for each recipe, irrelevant of the grain bill; 15l.
Then I just sparge until I have the correct pre-boil volume in my kettle, which obviously means a little bit more sparge water for higher gravity beers to compensate for the greater absorption by the extra grain.

It means I'm not faffing around with ratios & volumes, just need to stick my grain weight into BeerSmith to get my strike temp.

That wouldn't work for different brew lengths say 20L, 40L , 60L and 150L ;)
