MALT EXTRACT-how off is "off" ?

I have unearthed a couple of large tins of Edme DMS malt extract with a 2007 sell by date ,hooray ! The tins have bulged out at the ends and distorted , boo ! Like I said....how off is off ?

I recall in the 70s eating WW2 surplus canned food that was 30 years past its stamped date to no ill effect....fair enough ,the tins werent bulging ,but ,you can see where I am going here .Just what could be the problem here ?Will the malt have started to ferment ? Or what ?

I am going to open a tin in a day or so ,in a bag ,in the bath ,or the middle of a field even ,and see what it looks and tastes like .You might say "for the cost ,why potentially waste a brew ?" Well ,I am interested to see what state its in and what has gone on.

In the meantime...any ideas ?
 
Yes mate ! I plan to put a couple of extract and adjunct lagers on the go for my current temporary landlord who professes to like some yellow drivel apparently called "forstrrs"....or something .The long range plan is to get him to accept a more malty taste ,then Kolsch him up proper and whilst he is momentarily stunned get him onto IPA ! The cider/apple ale I have on the go has every appearance of going to over 12% and refuses to go in the same room as it . The plan for that therefore is to get HIS landlord with it !
 
Buying favour with your landlord with beer - I like it. If I were you I'd make something really easy to drink, light like a lager, with just enough hop profile to be considered an ale - then give him plenty of it, and if it's free, he'll drink it ;)

....meanwhile ,I shall be making some of your honey magic brew for myself.....I havent drank at all for a few years for boring medical reasons but I used to enjoy Fullers Honeydew very much.....hopefully I can manage something I can enjoy as much

I will post up what happens when I open the EDME time bombs !

I was considering these Edme bombs today....being that they are Diastatic Malt then would it be the enzyme activity that has got them ballooned out at the ends ? And what will that mean to the contents ? One way to find out for sure but until then ,opinions ?
 
My ol Mam was an expert on what goods to trust past sell by dates and long time tinned goods On sorting her cupboards out i was pulling jars of jam out with shilling n penny prices on them!! "Jams OK Sugar in high concentration is a preservative" was her response to my desire to chuck it..

But on the other hand any tin that was bulging including her beloved corned beef had to be binned..

so you have a high sugar bulging tin hmmmmm?????

crack it open n take a wiff im sure that will answer the question :)

and if it dont smell bad, then you have the ingredients for a real vintage brew.
