Look up home to make zero beer, basically make you beer per usual method(maybe use less fermentables as well) then when your all fermented stick in a pot boil off the alcohol 80°ish? Not sure how long per abv to remove etc but thats the gist from the article ive just read.......or just buy it🤣🤣🤣

I have discovered accidentally that adding an extra litre of water to a beer kit does reduce the ABV amount… did a coopers larger and added 1 litre more than I should have!!! ABV went down to 1.5… I did manage to increase it up to 3.5 by fermenting an extra week with 500g of sugar added.. all turned out well in the end… so, yea. If your using a beer kit, if it says add 23 litres, add 24 or nearly 25 litres… That should sort out the alcohol levels in your beer by reducing the ABV for yea👍🏻
 
No I can only assume either a hydrometer mis read, or an incomplete fermentation based on time rather than gravity reading.

I've done a few low alc AG brews using 300-500g base malt in 20l and what I have found is they take an absolute age to drop clear even using S04 yeast, it takes as long to clear as a 4% wheat beer using S33 yeast.
