I normally use WLP001 yeast for most of my beers. I was recently given a few Danstar Bry-97 Dry Yeast sachets and I have a DIPA currenlty fermenting with it and all seems to be good so far.

The reason for my question is I am about to rebrew an ale I made with WLP001 and as I have some Bry-97 thought it would be worth saving a few quid and using this instead.

Will it massively affect the flavour? I believe they are both derived from the same strain (Chico) according to another source, so should be fairly similar?
 
IMOP it's certainly worth trying different yeasts with the same beer as you will find different flavours, attenuation and maybe some similarities so I would say give it a try...

I've used both WLP001 and BRY-97 and found them to be both very clean. I didnt do any side by side comparisons or anything but I dont think you'll get any huge difference between the two. In fact I'll think you'll be quite happy with the results from BRY-97. I was.
Be aware that there's talk across the forums that BRY-97 is a slow starter with a long lag time (as much as 3 days iirc) but when I used it it was fine and started in 12 hours or so. Just make sure you re-hydrate it (although I didnt)
 
Unconnected, but I've just taken the plunge and ordered a liquid yeast from GEB (Fermentum Mobile Kansas Ears). It'll be the first time I've ever used one, because there are no specialist American Wheat dried yeasts and I want to see what difference it makes.

Obviously I'll need to make a starter, which I've never done before. What do I do? The GH book make it look like I make 1l of wort with extract, pitch the yeast and leave for 2 days, discard the fermented wort and pitch the cake. Is it that simple? If I do the other brew I've ordered first (American IPA with dried yeast), can I keep some of that wort back and use that for my starter?

If you're brewing close together yes keep some wort back and pitch the yeast into that..

I dont know about american wheat but I do think for certain styles where the yeast has character liquids are worth it..

For a 2L starter
-Put 210g of DME in some water mix and boil for 15 mins to sanitise . I always have a second pot of water boiling to top up the boil off. You can see how much you need to top up to because of the scum mark left by the DME in the pot
- Cover and cool to pitching temp in sink(s) full of cold water
-Put the starter wort in a 5L demijon or a 5L water bottle. Add your yeast.
-For 2-3 days shake at least 4x per day until your not getting any more C02 off-gassing
- You can now pour this into your wort of if you like, stick the starter in the fridge, crash the yeast out then pour the spent starter wort off. Then pitch the yeast

If you havent got any DME you can use Holland & Barrett malt extract (this is of course LME)

Yes. But make sure the OG is about 1.0.40. Dilute it if necessary. You'll need to freeze the wort if you want to keep it. Then when you come to use it you'll need to boil it for 15 mins to make sure it's sanitised

I think I'll do this - I've just been to H&B and it's £5 for a jar of LME!

Do you need to crash the yeast out and pour the wort off? I think I saw a video showing someone just dumping the whole lot in. I wasn't sure this was right as wouldn't it add unwanted flavour?

After reading your post i'm thinking crashing it off is probably the way forward?

You don't have to, I only crash and decant if it's more than 10% of the total batch volume. So 2L in a 20L batch is fine.
 
They do a 454g of their own brand which is cheaper £2.69

Didn't see that when I was in the Dundee Overgate store today - is it usually with the cod liver oil etc same as the expensive one?
 
Dunno about cod liver oil but if its in the shop it's next to the expensive one

I found it today at the other end of the shop from the expensive one. The Fermentum Mobile website recommends a 1L starter with 120g of LME for 20L of up to a 1.057 beer - Can I use a 2L Coke bottle for keeping my starter in? Will I need to fit an airlock or just leave the lid loose enough for gas to escape?

Yes, just keep the lid loose like you say and shake it and squeeze the bottle as regularly as you can to get oxygen in.
