I,ve just read an article on brewing lagers and it says the MAX temperature for fermentation is 12 degrees celcius. I would of thought this was a MIN not a MAX. Anyone comment ??
For lager yeasts 12C is pretty much getting to the max, although some strains are happy up to 14C.
