My go to for kettle souring has been about 5 capsules of this stuff:

I've run out recently and will need to source some more. It got be thinking, is anyone like me, a bit of a cheap skate who doesn't want to pay the cost to sour one beer when they can sour eight?

I know it can be done with grain, but that to me is a little too much risk against reward.
 
Fair. I was curious if anyone had any not by the books approaches to it is all. I often read about good belly being used in the us as an alternative.
 
I make a lot of lacto fermented pickles, one day I'd like to try using pickle brine.

These days though I use Philly sour which I really like.
