Could I cut the bottom piece out of this freezer to fit a keg or 2 in

One potential issue before you do the above.
The top compartment, is it a freezer compartment? If it is there is no obvious door to it and so I wondered if the main door was shaped to seal the compartment when closed. If so, adding a collar would effectively break this seal and would cause problems as the cooling to the freezer compartment would be trying to lower the temperature of the whole fridge to below zero.

Decided to go the easy way I think
With a hacksaw and screwdriver I'm making my way in hope I can bend the pipes a little to fit the keg I also dug out the door fits perfectly now
