Keg Conditioning saison's

Hi,

offered to brew a beer for my wife's friend's "DIY" wedding on 12th August.
Probably should of read the wedding invite, details abit more when we first got them (month or so ago). Anyway....next week I'll be brewing either my saison of love, that is a tried or tested recipe or an APA I've done before but tweaked, or redo my latest batch of Midsummer Moasic. Either of the 3 will be force carbed due to time constraints. My dilemma is I'd prefer the saison as its an all rounded beer that has been enjoyed by everyone, male or female, who has tried it. What I am hesitant about is will a saison be fermented and conditioned in time if I force carb it.

Can anyone shed light on their experiences with kegged saison's.
Looking back at my blog, my last batch in may took 9 days to ferment, then force carbed a keg over a week, had some then left for another week.

obviously this time around though its not just me drinking it! So want to get it abit more right.
 
Hmmm!

Just fractionally over five weeks means that the fermentation should be completed but it leaves very little time for it to clear; especially if you are wanting to transport it any distance.

My advice would be to think back and try to remember which of your chosen brews cleared best; and then brew that one!

The photograph is of a Bitter:
o Started 22nd January 2017
o Transferred to 650ml flip-tops 3rd February 2017
o Carbonated in fridge then transferred to shelves 14th February 2017

The photograph was taken on the 27th February - one day short of the five weeks you have!

I have to say that the Bitter tasted a lot better last week than it did on the 27th February; but if you get a move on and if everything goes okay then it can be done! :thumb:

Many thanks for the quick post, your bitter looks good!
I wont be able to brew until early next week monday/tuesday. My saison tasted fine after 4 weeks, force carbed. The only thing I had issues with excess foaming, clarity isn't really top of my list, more flavour and aroma. Anything I do would have to be force carbed given the time.
