I put my first kit in the FV just over 48hrs ago and I've just sampled it now I had an SG of 1039 and the gravity now is 1013 giving me 3.4% roughly I hope to get it to 1008 for 4% is 48hrs quick?

Anyway I have to say my sample left me tempted to pour off a few more pints it was nice although cloudy but still very very nice!

Chuffed isn't the word!

On another note will the exposure to air with the lid off have any negative effects?

Sounds quite quick, Kits mine normally take about 7-10 days probably more 7. That said the more vigurous part of fermenting is within the first few days.

What temperature are you brewing at?

Slightly high at a constant 21/22deg but not overly warm tbh I was surprised by the gravity was expecting half way although the my krausen has fallen over the past 24hrs

Might end up waiting 4+ days for the final few points...

dont let them bully you lol

you try it and try it regular how else are you going to be able to know how it changes during fermentation and conditioning

im always trying tiny samples of my brews

tonight im adding finings to 9 different dj of wines n cider and every one has / will be sampled

and i got a nice little buzz going on right now

I definitely got a nice first pint buzz (my sample vial is half pint sized)

I was so stoked I even attempted to get SWMBO to have a try, she told me to take my muddy water away... Should have known better!

 Not sure what is funnier, you having a half pint after 48 hours or the exercise in futility in getting the other half to share our enthusiasm.

But all sounds like its going good now:drunk:

Wait till next Wednesday or Thursday and take another hyrdometer test, all being well your fermenting should be finished and you should be ready to bottle (unless of course you are dry hopping) but like you have probably read several times already many of us leave it a further week or 2 after that

Initial fermentation (krausen) is usually very vigorous and with me lasts about 3 days, but then there's a slower phase of fermentation that further reduces the gravity. After that the beer starts to clear a bit. All in all I always leave my brews in the FV for a good 2 weeks - you get much less sediment in your bottles that way. Then leave it for a further week to 3 weeks depending on the type of beer. Stouts can usually be drunk sooner than bitters.
That's all for 1 can kits. 2 can kits seem to take longer to ferment in my experience.
