Just how aggressive should WLP550 be?

Hi, guys.

For the last week, I have been preparing a starter from a WLP550 vial. I poured it into half a litre of 1040 wort a week ago and there was steady bubbling but nothing crazy. On Tuesday I stepped up to a litre, on Thursday 2 litres then yesterday morning split 4 ways, keeping 3 lots in Grolsch bottles in the fridge and pitching the other half litre into another litre of 1040 wort. The plan is to pitch that into today's brew (a 1075 OG dark ale).

Each time I stepped up the volume, the yeast would gurgle away but not exactly climb out of the carboy. The temperature wasn't exactly constant, but would have seldom dropped below (say) 18 C - it was left in the lounge.

By comparison, I harvested the yeast from the bottom of 2 Duvel bottles on Tuesday. I started by sticking about 0.1 litre of the (same) wort into one Duvel bottle, sloshing around and pouring the washings into the second bottle and 'sealed' with kitchen foil. On Friday, I pitched the bottle contents into half a litre of wort - and that is fermenting now with considerably more gusto than the WLP550 appears to be doing.

I just don't know whether to trust the WLP550, never having seen one before.

I decided not to trust it entirely.

I split the wort in two - pitched the WLP550 in one and the Duvel yeast in the other. Now we wait.....
