This weekend I opened a bottle of my first ever home made wine.

It was the strawberry kit from Wilkinsons. I started it around 23rd November 2010 and I followed the instruction to the letter. I remember being very disappointed when I had my first taste (about 4 weeks after it was started - the instructions set it would be ready!) and it was sharp, acidic and just downright vile! Because of this I racked it into a clean DJ and started on another batch and let it be.

I finally bottled that wine last weekend and it was amazing, especially for my first attempt! It was crystal clear, a beautiful shade of orangy pink and the flavour had mellowed an awful lot. I passed a bottle on to some family members who happily polished it off! Only got 3 bottles left now! :lol:
 
I made some of this wine in September 2010. It was sharp, thin and cheap tasting and really undrinkable. I did the same, left it to mature and last night had my second taste of it and it too has mellowed. Still not keen on the strawberry taste but thats my personal taste. Did think I would never attempt again but now think I might do a different flavour and just leave it for a year to condition.
