Just come back to brewing

I done this really cheap beer kit (£11.00) and made it my own from some tips I got it from a 40 pint -3.8% to a 32 pint 5.031% Rocket fuel , and also learning wine making from concentrate , as I think the beer an ales are now under the belt (from kits) my next brew will be a St Petersburg Golden Ale at £25.00 this also is a 32 pint kit which is a 36 pint kit ,
I have learned that if it comes out too strong that I can bring it down with cold water on the secondary fermentation ,
I use only the ingredients provided and I don't use any enhancers or other chemicals ,so my brew is organically brewed....
Its just a waiting game with me and the products are real
