Presume you mean the bungs the same size as for a DJ? They are used to seal the DJ after you have stopped the wine and want to leave it sealed to mature before bottling. Wine matures better in bulk if you can spare the DJ for a few months or years in some cases.
 
Oh OK, thanks Bob. Another query, I picked up 4 very nice glass demis today from a free cycler, and he gave me a bag of goodies, some of those smaller air locks still in the rubber bungs. Should I separate them to clense, or can they be left in-situ? Reason I ask is a couple are rammed in quite tightly!!

Leave them in the bungs and dunk the whole lot in your steriliser, mine never part company.

To get down the inside, wrap some kitchen roll around a small stick or the handle of a teaspoon.
