I have just racked my berry port today (called it Isabelles port after my daughter who was born in October when I started it) and first taste was very young and fruity so has potential.
it started off at around 1.150 so quite high..... it was down to 1.015 when I racked it and about 1 bubble every 2 -3minutes.
I have topped it up with sugar syrup (150g in 400ml of water) but didn't quite use it all.
what do I do next ? my plan was to leave it to ferment again until it stops if this is correct and then I do not know.
I am looking to keep a couple of bottles for my daughters 18th and 21st
it was made using greysachlemy recipe with slightly more fruit.

From all the recipes I've seen they all say to rack off the first, leave for a few more weeks, rack off the second, and then when crystal clear bottle it. If your not using a stabiliser then just leave it and rack it till it's clear.

Hope this helps, I've just put my first port on so no expert lol but I've been through quite a few recipes this week and they are all much the same when it comes to racking off.

Well done   .

I made my first a DJ of port unfortunately I don't know which one it is ( I didn't label it) and when No 2 came along I had stopped homebrewing because of lack of time and space. So I made with my boys (8-10) a DJ each of port to be savoured on their 18th and 21st birthdays.

Here it is

per gallon

2lb damsons
2lb elderberry
2lb blackberry
1lb raisins
1 tsp pectinase
2lb of sugar

Packet of Port yeast. Squish all the fruit up, disolve the sugar in the absolute minimum of water and add. Ferment in a bucket for a week then strain of the fruit extracting all the juice then put into a DJ and ferment. Once it has stopped rack into a clean DJ and stabilise with a campden tablet and pottasium sorbate. Then leave in the dark for a year or two before bottling. Then leave again for a major family celebration. :D :D preferably 5-10 yrs or longer.
