I would like to do an experimental beer with this but my research so far tells me if I use wine yeast for the main fermentation it makes the beer taste awful. But, it's alright if brewing a barleywine (or high gravity brew) where the OG is high so adding a second yeast in secondary will lower the FG more..

Has anyone tried this?
