How does this APA recipe look?

OK gents, looking at doing this in the next couple of weeks and want a bit of opinion on it. Do you reckon ahtanum and mosaic will go together ok or will the mosaic drown the ahtanum a bit? Also, thinking of adding a third hop into the mix... maybe some nelson sauvin, but wasn't sure if that would go with the other two or not. Could always use some amarillo again, but people will think I'm addicted to the stuff.!



Oh, I'll be dry-hopping a bit as well, but forgot to add it to the recipe.

HOPS:

10 g - Northern Brewer, Type: Pellet, AA: 7.7, Use: Boil for 60 min, IBU: 21.97

10 g - Ahtanum, Type: Pellet, AA: 6, Use: Boil for 10 min, IBU: 6.21

10 g - Mosaic, Type: Pellet, AA: 12.5, Use: Boil for 10 min, IBU: 12.93

I like the malt bill notlaw. I've got a couple of recipes similar to this. I think this works well. I've done a few variants with a higher Vienna % and/or replaced the crystal with Munich.

I love mosaic big style. And I've dabbled with ahtanum but not in this sort of combo. I'm fascinated to hear how this comes out. Maybe include in the next bottle swap [emoji6]

My only thought is what's your mash profile? And maybe you could have paired a different hop. Chinook?

I really like Ahtanum, I might do a nice gentle single hop with it soon too. When you say pair another hop, do you mean add a third into the mix, or swap one out? Funnily enough, I've just picked up some more Centennial and was thinking of adding some of that into the mix, or dry hopping with some as I LOVE the smell of it.

I'll mash at 67°C, which seems to be my favoured mash temperature. Wondered about dropping a degree to make it a bit lighter, considering the increased Vienna will add some body anyway.

Whaddya reckon?
 
I was thinking to add another "dominant" hop in. I find that ahtanum is a good accompany hop as it won't stand up on its own against mosaic. Something like centennial, simcoe, or chinook would be great with it. Nothing too fruity. More piney. Dry hopping with mosaic is awesome by the way [emoji6]

I agree about mashing lower. Not to low as your not in the 60+ range of Vienna. But a good 65 (maybe 64) would be good. I like a good crisp beer.

But that's just my opinion. [emoji12]

I've been considering an all Ahtanum American pale. I've just been using Cascade, which is great.

I've also had a couple of all Mosaic commercial IPAs which are fantastic.

I've not brewed with either so couldn't comment on pairing them, but I am interested in how it turns out.
 
I just checked the recipe for the APA we made for the Redhill beer festival in November 2015 for a 4 firkin batch we used:
200g Magnum 1st wort
250g Cascade 15 min
250g Mosaic 5 min
300g Ahtanum flame out
500g Cascade dry hop 3 days
It was a great beer and 2nd to sell out but the ahtanum was very subtle.

Wow how many litres is this brew ?
