I suppose the yeast depends in what you are after from the beer. I made a Punk IPA clone a few months ago and used US-05 as it really lets the hop profile dominate.

I don't want to hyjack the thread but my Punk IPA clone can be found --> HERE. I used US-05 and it worked very well and compares well on a side by side taste test.

Well, just has a taste. The final recipe ended up as

9.2kg Pale
0.8kg Crystal

100g Chinook 90mins
100g Amarillo each at 30 and 0mins

A most interesting brew! though far from ready.

The crystal has made it a very deep amber colour. The amarillos and chinooks have given it a definite fruit flavour, very definite grapefruit/seville orange but the crystal gives it more depth. Try and imagine if you made a grapefruit crumble, this is what it tastes like (but without the crumble). Strangely, theres virtually no biterness on the tongue but the bitterness lingers after the fruit notes have gone.

I think this recipe could be much improved by using a different yeast. It still has that notty twang.

It strong also. Can taste the alcohol. Quite a challenging drink at the moment but delicious, should mellow a bit with time. NOT the kind of thing you can drink 10 pints of on a saturday night!
