Hops,Why boil in stages??

Dave Line in the Big Book Of Brewing recommends putting all the hops in at the start of the boiling process .most recipes say to stagger the process -Discuss !!!!!!!!
 
yep, this ^

at 60 mins you're extracing more oils and boiling off the aroma and flavour, hence, bittering it. at 30 minutes you generally add them for overall hop flavour. at 10 to 0 mins, less oils are extracted but you get more of the flavour, taste and smell of the hops. :)
 
When it's said add the hops at 0 mins what does this actually mean?
Is it as you turn the boiler elements off and begin the cooling?
 
A chemist could explain it but essentially the longer you boil alters the chemical makeup of what comes out of the hop. You also have the added thing of some hops being better to add at the start as they have nicer bitter taste and some bring good at the end.
 
Andy, 0 mins includes the time to cool too, they need to sit in the brew for about 20 minutes to taste great. That's why some people turn to dry hopping, vodka extraction, steeping...I get round it by using the no chill method and leaving the hops in :cheers: lol.
