help with WOW brew please

Hi, im on the verge of starting my first WOW style wine.
I have a couple of questions though.
The original recipe calls for 1l of grape juice and 1l of orange.
I have 1l of red grape juice, 1l of apple and elderflower and 1l of pomegranate juice. The question is would I need to put 1l of red grape juice in the mix 500ml of the other 2 juices? Or could I put all 3litres of juice in?

The second question is regarding golden syrup, how much to put in? I was thinking 800g of brewing sugar and maybe 50ml of golden syrup?
 
I would go with an RGJ and pomegranate WOW variant. I have never used golden syrup in a juice wine but can't see that amount imparting much of a flavour note.

Apple & elderflower could be interesting, but try to find some white grape juice and make that as a second wine, apple makes a very neutral wine and the RGJ and pomegranate would completely overpower the elderflower.

I have never tried Pomegranate and RGJ but my favourite WOW so far is Pomegranate and WGJ, I would put Cranberry and RGJ second favourite so far. :cheers:

I would go with the 3 litres of juice. It isn't going to harm it, if anything it will make it better. I'm drinking some red grape raspberry and cranberry as I type. Turns out a nice rose colour.

Not sure about the syrup. Stick to what you originally thought I'd say and see how it goes, it isn't going to kill it.

You could go with all three in one brew and it will be fine. Just recalculate your sugar additions to compensate for the extra sugar in the juice. I have made Apple & Elderflower with WGJ and it came out nice. But if you add it with the other juice you will lose the elderflower aroma and any flavour will be overwhelmed. Better to just use apple if you mix like that.
 
Thanks guys, I will use all 3, the idea is to have the apple and elderflower as a very subtle aftertaste.
In regards working out the sugar....if the recipe calls for 800g but each carton of juice contains 100g sugar that means I would need to put in 500g sugar yeah?
 
If you are using the WOW guide you should be aiming for a total of 1100g so you have 300g total in the cartons and you need to add 800g, this should work out around 13%.
 
Sorry about jumping in on this post, but would you rack your wow into another demijohn at 1000,
and then ferment out, I have seen this method on a superior wine kit I have.
 
I leave my wow's in the DJ until fermentation has finished then leave it alone for another week then rack to another DJ, I then degass add stabilise and clear as per WOW guide in the forum.
 
I only rack when absolutely necessary. Every time you rack you risk both oxidation and infection, so it's best to leave the wine be as much as possible. I usually rack once, to take it off the lees before either bottling or leaving to mature. I also rack before adding finings if a wine refuses to clear.
 
Well im putting it all together tomorrow lunch time, hopefully it will all go well! Any ideas on how much golden syrup to put in? Or should I maybe just forget that idea?

I have a wilkos blackcherry kit on the go at the moment, I have followed the instructions which stated on day 3 to top up the water (which I have) and now its bubbling through the airlock and spewing foam out everywhere!! I've put the dj in a stock pot to catch the spills and left it too it.
Will it be ok or is there something I need to do?
 
You could put a tube in the bung going into a jug or bottle with some water in it. Saves having to clean out the air lock, but it should settle down again in a day or so.
