Although I live rounded by vineyards here in the Penedes, I use the kits because the purchase of the grape the must is difficult since the wineries for the manufacture of cava buy it all. and it is easier to work with the kits, if the harvest of the grape is loose from sugar the fermentation of the wine becomes very complicated.
