Hi All,

This is a bit of a first for me as I am a forum virgin!

I have been getting into my home brewing over the last couple of years and used so much of the foruns info I thought it only fair I registered and share a little back.

This is my second 'season' as it were, My interest lies in foraging and aquireing rather than kits. Last year I made 5 Gal of Cider (traditional method) and 2 gal of Elderberry and raisin wine (which went down very well) and a good 2l of sloe gin (it cures colds don't you know :D ).

This year i have up-scaled a little, bought a fruit press and scratter. I currently have 5 gal Cider, 1 Gal Blackcurrant, 1.5 Gal Elderberry and blackberry, 2l Bramble scotch, 2l sloe gin and 1l Damson Gin on the go; 2 Gal of Cider in the primary i pressed last night and enough apples and pears for another 2 Gal cider and 3-4 Gal of perry.

Planning to get on with that today.

There you go, thats me and what i'm upto.

Oh, and i am going to do 2 Gal of apple wine and 1 of fruit tea wine (twinings rasp, black and logan berry)

Hi All,

Just put the kettle on for my Fruit tea wine and realised i don't have any tannin. I hae heard about using a standard teabag? any suggestions on how to add it?
 
just steep a tea bag for 15 mins or so to make a very strong tea, remove the tea bag and add the tea into your brew :thumb:

Ive just finished the Fruit tea wine and it smells great!! Even my 5yr old waned to drink it so it must smell sweet!

Off to press some more 'fall over juice' as its known by my kids.

if anyone has a simple blackberry, elderberry or sloe syrupy type thing recipie i can add to my cider during the primary, that would be helpful. Was going to make a basic syrup and trial and error would termine the quantity per gallon?
