G.A........6 months :eek: , I've got too much happening in my life to wait that long! ( as I suspect have so many others :thumb: ). I'm not disputing that the beer will taste better after 6 months, I'm just pointing out that in the real world most people don't think/plan that far ahead!!!!!!!!
Also, I'm not reading from a rule book :rofl: , I'm simply offering the benefit of MY OWN PERSONAL EXPERIENCE!

P.S. I tend to push most of my yeasts to their limits therefore adding extra sugar will simply snuff out the yeast, leaving residual sweetness! As you rightly say this has nothing to do with mouthfeel etc.
 
Firstly, thank you all for the advice. Secondly, I gave my beer a good sniff. WOW, big CO2 blast, not recommended, but not vinegary. I checked the sg again and still the same, 1.002. But when I tasted the trial jar, it's not bad :-). So I bottled it. I'll check it in a few weeks and report back :cheers:
 
Well, as promised I'm reporting back. The brew has been in bottles now for 3 weeks and after chilling its actually pretty good. Nice and clear with a decent head and very drinkable. I'm very surprised and a little puzzled, but happy all the same :-)
