If you give the bottle a little swirl, it'll foam up, pushing the air out. You can then quickly seal the cap on the bottle.First an AIR gap appears as the filling straw is removed

Good to hear it all works and frees up three of your four hands .Look what I made. Keith, @Buffers brewery made printed parts for me and supplied the lifting mechanism and some guidance notes. I made the wooden parts and assembled it
It's a bit wonky, but it works.
