When served from a pump in a pub (and at home by some of the more advanced homebrewers!) it is carbonated with a mix of carbondioxide and nitrogen. The nozzle on the pump is also a different type to those used for lagers, more akin to the sparklers used for cask ales.

Alot of it is down to placebo effect as well.. you THINK its going to be thick and creamy because you get told it will be every day of your life via advertising.

Agreed, the nitrogen and the nozzle add a lot to the mouthfeel of the beer.

I had a pint of Robinsons Stout at Christmas, it was hand pulled the first time I have ever had a pint of hand pulled stout and it was the best pint of stout I have ever had better than any pint of Guinness from either side of the Irish sea.
