I'm going to modify my next kit by doing a mini mash. My question regards grain percentages. Say a certain type of grain is listed as 'can be used up to 25%" of total grains, is this of total fermentables or of the actual mashed grains? The reason I ask is if a style usually calls for using a certain malt near the top end of its maximum percentage, obviously one would struggle to get this ratio overall without going over it in the mash, if you see what I mean
