I am experimenting with different products I happen also to volunteer in my local food bank that gives me access to very mature fruits that I take home to ferment into wine before it gets discarded into the bin I have made banana wine before and I was lucky with the result This time I added Golden Syrup instead of sugar the result is a white dry wine very clear and with a good body

A very simple one here : 1x 750 grams Aldi bottle of Golden Syrup . 5 very mature Bananas . 3 Liters of water
Method : Dissolve all the Golden syrup in a clean bowl adding a kettle of freshly boiled water , add the remaining cold water to complete and stir in a clean bucket (I use a 10L food grade Yogurt bucket) add the bananas and the yeast (I used 1 shy tsp of Young's wine yeast ) cover and stir everyday for one week After 7 days remove the bananas, filter and funnel the wine in a gallon demijohn, top it up to complete the gallon add the airlock and in my case, 3 weeks later(22days to be precise) fermentation stopped so I bottle it up pour some in a glass and made the post
