I had a go at making a ginger plant in the hope of making some ginger beer.. followed the instructions to the letter as well as and exploding bottle it tasted awful  and felt it was a waste of time. I have tried to rescue this by putting the remaining liquid into a DJ and added more ginger and sugar and a little more yeast.. it is fermenting away happily now but I'm not sure what it will become a wine or a beer. :wha: I was thinking of letting it ferment out then put it into pop bottles primed with a little sugar and sweetener to taste. I would think this would be quite alcoholic due to the fermenting.. Anyone got any thoughts on this ?? :wha:

I find it comes out bone dry but that's not always a bad thing. Did you take a hydrometer reading for three days to make sure it had finished fermenting? I find my ginger beer finishes out as low as 0.998 (and is often as high as 8% ABV!) so patience is key with such a high amount of fermentables in the usual GA recipe.

If you have it in demijohns now, I say leave it with a bubbler until you're *positive* it's finished fermenting, then rack to clear glass bottles (or PET soda bottles if you must) with half a teaspoon of plain sugar per 500ml. Some choose to add Canderel or Splenda to artificially sweeten it and I have done this before with good results. Leave the bottles on the warm for 4 days, then pop them in the fridge or cellar to chill.

Remember, it's still going to come out dry BUT you can easily mix it with lemonade to make a brilliant summer drink. Some people here have also mentioned making a sweeting syrup using sugar mixed with warm water to mix it with. Good luck and reply if you need more info!

I didn't take a reading before but it is still in the DJ fermenting away will take a reading when it done and see just how dry it is.. Don't like the idea of using sweeteners but don't like the idea of exploding bottles either.. Thanks for the info will report back on the result. ;)

With my limited experience in ginger beer, I found that Racking to remove sediment also removed the ginger particles. Not sure how to solve this :wha:

I have just done this and it does not taste of ginger at all yet the stuff that went down the sink smelled very nice indeed.. think I should just give it up as a bad job and let it go the way of the rest of it...... :(

There's a forum recipe for Ginger Beer written by Rickthebrew that I swear by. It's easy as cake and so popular in this house that I make at least 5 gallons a month. The ingredients are cheap and you can buy all of them at your local supermarket. I wouldn't bother with those Ginger Plant kits... Here's a link to the recipe:

I personally leave out the dried ginger and often use a little less than a kg of fresh ginger but make it as per your tastes! It's brilliant mixed with lemonade.

I was wanting to have a bash at this recipe ( fiery ginger beer ) my only question is, does it not come out too thin? The recipe doesnt include anything to give it body i.e raisins, sultanas, grape juice spraymalt etc.

I have just bottled my first go at this ginger recipe, me and virgilartois made one brewday about a month ago and its great stuff not thin at all, best ginger beer i ever tasted.
