'Fizzy' mead

Fermented right out but on sampling the first bottle today there is a slight 'fizzy' taste to it.
No bubbles. On opening there was no 'pop' or fizz from the bottle.

3lb of Morrisons honey
Sultanas
Nutmeg, cinnamon, cloves, an orange, bread yeast ( is that the culprit? )

started sg 1070
finished near zero.
Racked twice to clear over the 6 months

Didn't do the shake to de-gas - it that the problem?

I have another 5 bottles. To late to change anything?

It's not a bad drink but probably not what I'd want to offer to visitors.

wow that some ageing sorry not familiar with mead but yes degassing does help with wine or still cider also helps remove the homebrew twang some mention in terms of taste and smell.

I may be wrong but don't see why it can't be degassed good old shake or one of the plastic coat hanger jobs work well then left to settle again before drinking?

Yeah, mead isn't great from the get go. Needs to mature.

I'd say yes, degassing is probably the thing. Might be worth giving it a really, really good shake to get the gas out, then put the lid back on for a bit. Personally, I made a simple mead and deliberately made it semi-sparkling.

Thanks. That's interesting. It's in bottles now but I could pour it into a demi john and then shake it before re-bottling.
A semi-sparking? I like that idea

This is known as petillant, where you can feel a little carbonation but it's not actually sparkling. Petillant meads are not uncommon and yours probably would taste great to me.

Your yeast found some more sugar in the sultanas or just some residual to chew on after it got into the bottles. No big deal.

Like you've discussed, you *could* pour out the bottles and rebottle, this will reduce the carbonation. But personally I wouldn't bother.
