Well, finally got my first batch of TC on the go.

I used the 2 litre packs they have in the chillers - made from concentrated apple juice.

11 litres (drunk 1), 2 Teaspoons of Pectolase, 2 Teaspoons of Yeast Nutrient and 5 teabags in half a litre. 1 satchet of Cider Yeast. - All in the FV and about 2 hours later the first signs of ferment showing.

SG started at 1.042 - is this OK or should I have added more sugar.

Total sugar = 312 grams if I need to add more can I add it via a syrup in a few days?

Racked off the WOW which is now sat in a DJ under the house clearing nicely
 
Straight juice gives about 4.5 to 5.5 %ABV, IIRC. You don't really need extra sugar unless you want rocketfuel

TC started very slow after 36 hours it was fermenting like a train - then after 24 hours it slowed right down - now 4 days later it has virtually stopped - is this normal? :?

Temp is around 20c

Depends on the exact juice, yeast, and temperature.
Stick a hydrometer in it and see.
 
Im no expert - on TC #3 brew I think it depends on the juice that you use as well but certainly not impossible. Have you topped it up yet - that will start it going again so do it slowly ;)
 
Ferment on my TC is now all but stopped.

SG = 1000

Started at 1.042 - so I reckon around 5.6%

Will let it go a few more days & then rack into another FV to let the lees settle - or would it be better to just let it settle in the first FV and bottle straight from there.

Had a little taster - bit raw but not unpleasant - so after a few weeks stored it should be acceptable. :drink:
