ok, well you'll want a starting gravity of about 1.070 to hit the 7% abv mark, which at 75% efficiency would need about 6kg of grain.
i can definitely recommend a mixture of Wheat Malt, Crystal Malt and Maris otter, using the crystal additions to give you a golden colour adjusted to suit, the Wheat Malt adding body and a silkier mouthfeel, and a residual sweetness to balance the strong ABV. if you want to go slightly darker, you can add roasted barley to the mix to change the golden orange colour into a nice ruby colour in very, very small quantities. you dont want alot of roasted or it'll come out black and you've got yourself a stout/porter, i'd say no more than 200g at these volumes, 100g would make it a nice ruby colour in a total grain bill of about 6kg.
in my lasest brew, Winter Sunrise, a 5gallon, 7%ABV version would look something like this on the grains:
4.8kg Maris Otter
0.5kg Wheat Malt (2.5 EBC)
0.5kg Crystal Malt (120EBC)
that would be about 22.5 EBC's, a nice deep (but not dark, dark if you know what i mean) golden colour
and 100g of roasted would make it 32 EBC's, a nice ruby colour
and to keep it simple, just adjust the Maris Otter weights to change your OG, and thus, the final ABV
for hops, with that malt profile i think you'll find the malt does all the work on the aroma.. which would be a shame to hide behind hops, but the choice is yours there
as for bittering, any hop will do.
If you plan on letting this mature for 2 or more months, going for about 45-60 IBU's should do the trick go higher than 60 if you want a LOOOOOOONG (4 month plus maturing time, as MEB will say, it's worth the wait :thumb: if you think you might be wanting to drink it sooner than 2 months, then stick around the 30-45 IBU mark and i reckon you're onto a winner :thumb:
