As most of you will know, SWMBO and myself are expecting our fist child. To comemerate this I would like brew something special, condition it during the pregnancy and crack it open on the birth. As this one will probably be my first AG brew, please keep it simple but strong, around 7% would be nice.

So here we go, recipie and name suggestions please. I will add, i'll be sending a bottle out to Admin, Mods and all the people that have helped me n the past. :cheers:
 
i'm not very good with names, naming my beers after events that took place during or just after the brewday, so could only come up with Baby Bobo Bitter or Triple B for short :oops:

as for the recipe, how do you like your beers? deep, dark and malty? or light, crisp and hoppy? i can definitely help with the malty ones but for pales i'm not the one to answer as i'm not too fond of them personally :oops:
 
To be honest BS, I drink beer however it comes. The only thing I don't really like is stout, so thats a no no. I'm not really a fan of really light ales, I prefer to drink lager/cider in that instance. so anything medium/dark and fll of flavour will do nicely I think.
 
ok, well you'll want a starting gravity of about 1.070 to hit the 7% abv mark, which at 75% efficiency would need about 6kg of grain.

i can definitely recommend a mixture of Wheat Malt, Crystal Malt and Maris otter, using the crystal additions to give you a golden colour adjusted to suit, the Wheat Malt adding body and a silkier mouthfeel, and a residual sweetness to balance the strong ABV. if you want to go slightly darker, you can add roasted barley to the mix to change the golden orange colour into a nice ruby colour in very, very small quantities. you dont want alot of roasted or it'll come out black and you've got yourself a stout/porter, i'd say no more than 200g at these volumes, 100g would make it a nice ruby colour in a total grain bill of about 6kg.

in my lasest brew, Winter Sunrise, a 5gallon, 7%ABV version would look something like this on the grains:
4.8kg Maris Otter
0.5kg Wheat Malt (2.5 EBC)
0.5kg Crystal Malt (120EBC)

that would be about 22.5 EBC's, a nice deep (but not dark, dark if you know what i mean) golden colour

and 100g of roasted would make it 32 EBC's, a nice ruby colour

and to keep it simple, just adjust the Maris Otter weights to change your OG, and thus, the final ABV ;)


for hops, with that malt profile i think you'll find the malt does all the work on the aroma.. which would be a shame to hide behind hops, but the choice is yours there ;) as for bittering, any hop will do.

If you plan on letting this mature for 2 or more months, going for about 45-60 IBU's should do the trick go higher than 60 if you want a LOOOOOOONG (4 month plus maturing time, as MEB will say, it's worth the wait :thumb: if you think you might be wanting to drink it sooner than 2 months, then stick around the 30-45 IBU mark and i reckon you're onto a winner :thumb:
 
A small amount of chocolate malt goes well in a darker beer - I'd use either chocolate or roast barley to add colour & a tiny bit of flavour.

Bobo's Pride

This (Fledgling Pride) was one of the nicest beers that I brewed in 2008 I've scaled it to 23L and 1.070 here's a pic of what it turned out like, Highwayman has also brewed this recipe and enjoyed it, the recipe below should come out at around 6.8%

16 gm Challenger [7.00 %] (15 min) Hops 5.0 IBU
30 gm Fuggles [4.00 %] (15 min) Hops 5.0 IBU

23 gm Fuggles [4.00 %] (0 min) (Aroma Hop-Steep) Hops - at 80c for 15 mins

EDIT - If you do decide to brew this I'll look at the hopping / IBU for you as 28 IBU might be out of balance for a 1.070 beer :grin:
 
Whilst I hate to take a wee on the bonfire, are you sure that producing such a high ABV beer for your first attempt is wise? I'd hate to see someone's first attempt using so much ingredients come crashing down and put the potential brewer off further AG brewing. I'm not saying it will but it's not something I personally would want to tackle on my first brew and bear in mind that it's going to need conditioning for a long time.

I personally would brew something like a 5%ABV Summer Lightning, plain old Maris Otter, Challenger and East Kent Goldings ready to bottle / keg in 10 days, good to drink a week after. It's less fraught with issues that you've not yet encountered and you'll be certain to have a good ale ready for the big day.

Again, apologies if I'm taking a pee on a bonfire that doesn't need putting out, just my personal thoughts on this.
