Hi

about 10 days ago i made a high gravity stout (1075) and pitched in some nottingham yeast that i had kept in the fridge from another brew the yeast was about two and a half months old. After around 10hrs in the FV it was fermenting like mad this continued for a few days till the yeast dropped out when i took a hydrometer reading it came out at 1035 i monitored this for the next few days and it stayed the same so i pitched a fresh packet of nottingham and left for 2 days nothing happened so in a fit of desperation last night i put in a pack of s04 (dont know if this will make it taste gross or not) as i have not had a faliure with that stuff and today nothing either still a gravity of 1035. My mash temp was slightly higher than normal at 71 deg i know this would produce more non fermentables but i didnt think that much any ideas from more experienced brewers out there as to what has gone wrong? as i am at a loss

Thanks in advance

Mick

sometimes that can happen with high gravity ales. It happened to us 2 weeks ago when we made a brown ale at SG 1.066 it finished at 1.020 stayed the same for a week so we just bottled it and its fine now. :thumb:
