I have heard that using finings such as Irish Moss in the boil prolongs the shelf life of beers. So should I always include finings? By how long will finings reduce shelf life?

Up to you. When I started, I used to use Irish Moss but don't bother anymore. Clarity of beer doesn't make a difference to my enjoyment of it. I get better results now, but can't say for sure if it's related to the lack of Irish Moss or improvement in my technique due to experience.

I've never heard it affecting the shelf life before, not to say that it isn't true.
