So, I'm a cautious guy despite liking very hoppy ale, as my username suggests.

Instead of sticking the hop pellet sachet in after 4 days like my Festival instructions say, knowing that I usually wait for at least 12 -14 days before priming/bottling instead of the suggested 10 days, I waited to stick the pellets in until day 6 so they have the suggested immersion period.

That was yesterday. Took a gravity reading too see where we are so far and had a snifter from the trial jar - gravity reading a promising 1013 thus far after nice steady fermentation but, whoah, boy was it hoppy, even after only 1 day of hop pellet immersion!

As I have no prior experience hopping of any kind, other than adding the powdered variety to a St Pete's Ruby ale, is thus to be expected?

Does it calm down during conditioning, or should I get it in another FV before it gets too 'bold'?
 
After I bottled mine 4 weeks ago,I had a taste 2 weeks in and it was way to hoppy but 2 weeks on and its starting to mellow out. should be a good brew in another 4 weeks. Its the same old story though,you gotta be patient :grin:
 
I'm eagerly awaiting the bottle opening ceremony of my Golden Stag next week. It's had two weeks in the garage so far. When I bought it from my LHBS I was advised to only put half of the hop sachet in, which I did.

The guy said that unless I liked my beer very hoppy, I should hold back on it. Good luck with your brew and wish me luck with mine!

...yeah, but it's so damn hard when ifs sat staring at you every time you go in the garage!!! ;)

So, I think I'm gonna get it out a little earlier than I might have done otherwise (left last two in the FV for two weeks before bottling) to try and take the edge off the hoppyness!

Then a case of probably giving it a couple of months before the grand opening! It was brewed with warmer, sunnier days in mind after all!

archno1 - let us know how you get on with early tastings?
 
Yep, will do. Btw, mine was in the FV for 19 days before bottling.
