I've just set myself up with an 100L system with a plastic conical fermenter. Just wondering what the best way is to maintain the temperature in the fermenter since the brewery is set up in a garage with no insulation. I can't seem to find a fermenter jacket large enough, so I was toying with the idea of drilling a hole and adding a fish tank heater, but worried about the high temperatures around the heater and how to make the FV airtight once I've drilled a hole in it.

A hot water cylinder jacket or an old single bed duvet, it would depend on the exact size of your vessel. If adding an aquarium heater (are these food safe to add inside wort?) inside the vessel you could seal its cable up with a gland type fitting an electrician would use for making a watertight outdoor connection, it would also act as a cable clamp so that you could let the heater dangle at whatever height you would wish inside the vessel.

You could also run a small fan heater linked to an inkbird type stat that will blow warm air up in around the bottom of the fermenter though that would tend to heat up more air than what you would need.
