Hi,

wonder if you could help, as I'm returning to wine making after not doing it for many years? I started 4 wines (December to January). 2 have been racked once and the other two, twice. All looks as if it's going well but I've forgotten how long they take to finish fermenting. I'm in no hurry but I just wondered. They are kept at a nice temperature and keep stopping and starting up again. I'm making parsnip, tangerine, Rosehip and an experiment with a few jars of apricot jam. As I said I'm in no hurry but would like to know, could it be six months before it's ready to bottle or more?

If you have a hydrometer take readings over several days to see if it has finished fermenting.
